Imelletty perunalaatikko is a traditional Finnish dish made with mashed potato and usually served for Christmas dinner. The dish is made as a sweetened version. The traditional method calls for molasses for making it sweet however I made it as a savory version using chilli flakes as per my daughter's wish and hence it is mildly spicy. It was looking like a savory potato muffins with a heaven in each bite and we enjoyed each and every bite of it.
It was so soft with the goodness of egg and fresh cream along with potato. So let’s get started with the recipe now.

Potato – 1 big
Heavy cream – ¼ cup
Egg – 1
Butter as needed
Bread Crumb powder – 2 tbsp
Salt as needed
Pepper – 1 tbsp
Chilli flakes – 1 tbsp
Step by step Method with pictures:
1. In a pressure cooker add in the roughly chopped potatoes and pressure cook for 4 whistles. Once it is cooled remove the skin from the potato and finely mash it.Set the mashes potatoes aside. In a mixing bowl add in cream .Beat the cream using an electric beater until it is creamy and soft .It will take around 2 mins in medium speed.
4. Beat once again so that all the ingredients are well combined. Line a casserole or any oven safe bowl and pour in the ingredients sprinkle in some cheese and bread powder in the top.5. Preheat the oven at 180 Deg C for about 10 mins and the bake for about 30 mins. Serve hot.
