If you get to travel in Bangalore Salem highway, you can see a lot of Iyengar bakeries .one of the specialty dish in Iyengar bakery is the Masala buns and when we were in Bangalore we usually have a lot of travel in that roads, so I happen to taste the buns couple of times, I is so different and tasty compared to the regular milk/sweet buns. Since then I was in my to ‘do list .So finally I got a chance to a try it out and now let’s get started with the recipe.

Whole Wheat Flour – 1 cup
All-purpose flour – ½ cup
Active dry yeast – 1 tbsp
Water – ½ cup
Olive oil – ⅛ cup
Salt – ½ tsp
Sugar – 1 tsp
Garlic – 1 tbsp (finely chopped)
Coriander leaves – 2 tbsp finely chopped
Chilli powder or chilli flakes – 1 tsp

Step by step Method with pictures:
1. In a bowl take luke warm water and add in yeast set it aside for 5 mins for the yeast to get activated. In a mixing bowl add in flour (wheat and Maida), salt and olive oil.
2. Add in the activated yeast water, chopped garlic, coriander leaves and chilli powder.
3. Finally sprinkle fennel seeds, mix everything slowly add in the water if required and knead to form a soft dough.
4. Cling wrap it and keep it in a dark place for 2 hours, let the dough get proofed up. After 2 hours the dough would have raised punch in the excess air.
5. Divide the dough into 6 equal sized balls and line in a baking tray. Brush the top of the bun with melted butter and sprinkle in some sesame seeds. Preheat the oven at 180 Deg C for about 10 mins and bake for 20-25 mins
