Coconut Milk Pulao is a one pot dish which is very
easy to prepare. This dish is very simple, it doesn’t have any fancy
ingredients but the addition of coconut milk makes it a royal dish. It’s very
rich indeed. I have prepared the pulao without adding any vegetables. But We
can add Carrots, Beans, Green Peas or any I served this pulao with Paneer Kolhapuri
,Will share the recipe soon. The combination was awesome I would say..
I used my home made coconut milk to prepare this pulao.

Ingredients:
Onion –
2 sliced lengthwise
Green
Chilli – 2
Ginger
Garlic paste – I tbsp.
Coriander
Leaves +Mint Leaves – 1 cup.
Coconut Milk – 2 cups
Salt
– per taste
To
temper:
Fennel
Seeds – I tsp
Cinnamon
stick – 1 inch piece
Bay
Leaves – 2
Oil as
needed
Cardamom
powder a pinch
Step by step Method with pictures:
· In a kadai add in oil, Once the oil
becomes hot add in the “To temper “ingredients. Wait till a nice aroma comes
and then add in sliced onion and green chilli. Fry till the onion becomes
translucent.
· Now
clean the mint Leaves and Coriander Leaves .Chop the Coriander leaves roughly
and add in Coriander Leaves and Mint Leaves in the kadai. Fry for a min till
the leaves shrink. Add in the ginger garlic paste and fry till the raw smell
leaves. Now add in the soaked basmati rice in the kadai.
· Fry
the Basmati rice along with rest of the ingredients. Now add in the Coconut
Milk and salt. Wait for a boil and Transfer the contents to an Electric Rice
Cooker. The Rice will cook in its own pace, we don’t have to worry for the
perfect Rice texture when cooked in the Electric Rice cooker. Add Coconut
milk as per your electric cooker instructions. In my Electric cooker I
usually add 2 cups for 1 cup of Rice. For Pressure cooker Method see notes.
Notes:
· If you are Cooking in a pressure Cooker add 1 ¼
cup of water for 1 cup of Rice.
·
Use
the Same cup to measure the Rice and Water.
·
In
a pressure Cooker cook for 1 whistle. Wait till the pressure gets released by
itself. The rice will be cooked perfectly. This Ratio is my no fail method
and I am following this ratio always. It has never let me down.

Use
a heavy bottomed Pressure Cooker otherwise Rice might get burnt in the
bottom.
·
Use
can even use Vegetable like Beans, Carrot, Green Peas, and Capsicum too.
