Finally we have come to the last week of the A-Z Baking Challenge and it has been so tough .We all finally managed to keep going. Today’s share is a delicious Upside down cake made with fresh fruits. I used the seasonal Mangoes to make this cake. Now let’s get started.
Step by step Method with pictures:
1. Sift together Flour, Baking powder and Salt thrice and set aside. In a mixing bowl add in soft unsalted butter and Sugar cream it using an electric beater or stand mixer until well combined.
2. To this break open an egg and beat well next break open another egg and add Vanilla essence beat well until well combined.
3. Prepare a cake pan, now arrange the cake pan with sliced Mangoes Roughly throw in the tutti frutti.
4. Now pour the prepared cake batter in the baking pan ,.Preheat the oven at 180 Deg C for about 10 mins and then bake at 180 Deg C for about 30-35 mins or until a tooth pick when inserted comes out clean. Allow the cake to cool completely and the slice and serve.
Slice and serve with a scoop of ice cream 🙂

Mango Upside Down Cake
Standard 1 cup measures 240 ml
Ingredients
- All-purpose flour – 1 cup
- Baking powder – ½ tsp
- Sugar – ½ cup
- Butter – 115 gms
- Eggs - 2
- Vanilla essence – 1 tsp
- Salt a pinch
- Tutti Frutii or glazed cherries – ½ cup optional
- Mangoes Sliced – 1 cup
Instructions

Notes
- The baking time may vary from oven to oven.
- Pineapple, apple can also be used to prepare the upside down cake.
- I used the seasonal Mangoes.
