It is very easy to cook and can be made quickly. I tried a simple poriyal which pairs very well with sambar .however it can also be used in preparing kootu.While cleaning snake gourd make sure your scrape the skin a little and remove the inner seeds and then chop them into small pieces. Now let’s see how to prepare snake gourd stir fry.

Snakgourd / pudaliangai – 2 cups (chopped) Shallots – 8-10
Green Chilli - 2
Turmeric powder – 1 tsp
Salt as needed
Grated Coconut – 3 tbsp
To Temper:
Oil – 1 tbsp
Mustard seeds – 1 tsp
Cumin Seeds – 1 tsp
Urad Dal – 1 tsp
Channa Dal – 1 tsp
Dry Red Chilli – 2
Curry Leaves a spring
Method :
1. In a pan add in the oil once it becomes hot add the Mustard seeds and cumin seeds let them splutter and then add in the channa dal,urad dal,dry red chilli and curry leaves. Once they turn golden brown add in the chopped small onions and green chill sauté till they turn translucent.
2. Next add in the chopped snake gourd and mix well. To this add in turmeric powder and the required salt. Mix well.
3. Sprinkle little water and cook in a low flame till the snake gourd is cooked completely .Finally add in the grated coconut and switch off the flame.
Notes:
· Cook in a low flame so that it don’t get burnt.
· Adjust the no of green chilli as per your preference.
