2. Remove it and set it aside. In the same ghee next add in Fennel Seeds, Bay Leaves, Cinnamon stick, Star Anise. Next, add in the green chili and saute.
3. Next, add in the sliced onions and saute till glossy and then add in the ginger garlic paste and saute till the raw smell leaves.
4. Next, add in the soaked Basmati Rice. Fry for 2 mins and then add in the measured water and mix well.
5. Keep the flame in high and then add in the required salt and then add 1 tbsp of ghee and Transfer it to an Electric Rice cooker and cook till it's done. And then finally add in the gee toasted cashew nuts and fried onions and mix well without breaking the rice. Close for another 10 mins and serve.

Cashew Pulao | Kaju Pulao
Standard 1 cup measures 240 ml
Ingredients
- Ghee – 2 tbsp + 1 tbsp
- Fennel Seeds – 1 tsp
- Bay Leaves – 2
- Cinnamon stick – 1-inch piece
- Star Anise – 1
- Cashew nuts – 20
- Green Chilli - 3
- Basmati Rice – 1 cup
- Onion - 2
- Ginger Garlic paste – 1 tbsp
- Salt as needed
- Water – 2 cups
Instructions
- Soak the Basmati Rice for 30 mins. Heat a Vessel with Ghee once it’s hot add in the Cashew nuts and fry till golden brown

Notes
· You can also cook the same in a Pressure Cooker.
· While Cooking in a pressure Cooker, after closing the cooker wait till the stream comes out rigorously, Once the steam comes excessively put on the whistle and cook for 3 mins exactly and switch off the stove. Let the pressure gets released on its own and then open the cooker and fluff the rice.
