Preparing different kinds of Chutneys and Dosa from vegetables and peels are very common in Mangalore cuisine. It is one of their specialty.
I have come across this cucumber dosa from my colleagues. I felt this is really one easy way to feed our family some vegetables.
My hubby and daughter are picky when it comes to vegetables so this dosa was my choice to feed them some cucumber. Vellarikai Dosai is an instant version and cucumber can be replaced with carrot and tomato too. Now let’s see how to prepare yummy Vellarikai Dosai.

How to make Cucumber Dosa
1. Grind the ingredients mentioned in the “To Grind” section to a fine puree.
2. In a vessel take dosa batter and to this add in the ground cucumber puree. Mix well and then add in salt and mix well.
3. Heat the dosa pan , once hot pour a ladle full of dosa batter. Drizzle oil over the edges of the dosa and Cover cook for few secs.
4. Flip the dosa and cook till it is done. Serve hot.
Serve Cucumber dosa with any chutney or Sambar. I served it with kara chutney and Idli Podi.
Tips & Variations
Tastes good when served with Chutney or Sambar.
Makes an excellent breakfast.
Adjust the spiciness as per your preference. Increase or decrease the no of green chilies as per your preference.
Instead of cucumber you can also use any other vegetables. Carrot , spinach , beetroot works well.
You may also saute the vegetables and grind before adding to the dosa batter.
Serving Suggestions
Cucumber dosa goes well for breakfast with chutney and sambar. You can also serve with some Idli podi and Coffee too.
Storage Options
I do not recommend storing dosa as it loses its crispiness. So prepare the dosa fresh as and when you are about to eat.

Cucumber Dosa| Vellarikai Dosai | Mangalore Cucumber Crepes
Standard 1 cup measures 240 ml
Ingredients
- 1 cup Dosa Batter
- Salt to taste
- Ghee / Oil as needed
To Grind
- ½ cup Chopped Cucumber
- 1 Green Chilli
- 1 inch Ginger
- 1 tbsp Coriander leaves

To tell you the truth I have never tried adding any puree to the dosa batter, though I like the idea. It will definitely make it very flavorful..cucumber and chllies sounds fantastic in a dosa. Will try this recipe the next time I make dosas.
