Raw Mango Sambar Recipe | Mango Sambar step by step pictures. Mango Sambar is another delicious sambar prepared with the season’s best fresh mangoes. It goes very well with White rice and any poriyal. It is naturally tangy from the raw mangoes and hence no need to add tamarind. Now lets see how to prepare Raw Mango Sambar.
2. Heat a pan with oil, once its hot add in the mustard seeds, Cumin seeds, Hing,Dry Red Chilli and Curry Leaves. Next add in the garlic pods and small onions.
3. Saute till they turn glossy and then add in the tomatoes cook till they turn soft. Next add in the chopped raw mangoes and mix well.
4. Now add in little water and then add in the dal .Mix everything together.
5. Allow it to cook in a medium flame till the mangoes are cooked to soft. Check for salt. Finally garnish with coriander leaves and switch off the flame.

Raw Mango Sambar
Standard 1 cup measures 240 ml
Ingredients
- Raw Mango – 1
- Toor Dal – ½ cup
- Sambar powder – 1 ½ tbsp.
- Chilli powder – ½ tsp
- Turmeric powder – ¼ tsp
- Salt as needed
- Coriander leaves – to garnish
- Shallots / Small onions- 6-8 nos
- Tomato -1
To Temper :
- Oil – 1 tbsp
- Hing / Asafoetida – ¼ tsp
- Cumin Seeds – ½ tsp
- Mustard Seeds – 1 tsp
- Garlic pods - 5
- Curry Leaves 1 spring
Instructions
- In a pressure add in the toor dal wash it really well and then add in 1 cup of water and pressure cook high for 3 whistles and then in a low flame for 3 whistles. Wait till the pressure is released on its own and then open the cooker. Mash the cooked dal with a ladle till smooth. Now to this add in the sambar powder, Red chilli powder, Salt and turmeric powder and mix well.

Notes
- Serve with Steamed Rice.
- No need to add tamarind as the raw mangoes itself are tangy.
