2. In a pan heat in oil once it becomes hot add in the fennel seeds,dry red chilli and curry leaves. Next add in the ginger garlic paste cook till the raw smell leaves.
3. Add in the ground coconut masala and give a good mix next add in the Chilli powder, Coriander powder, Garam Masala, Turmeric powder and Pepper powder .Mix everything well and make sure not to burn the masala. Cook in a low flame.
4. Next add in the cooked mutton. Add water as required to bring it to a gravy consistency. Cook till it comes to a boil and oil floats on top. Garnish with coriander leaves and switch off the flame.

Varutharacha Mutton Curry | Mutton Curry with Roasted Spices
Standard 1 cup measures 240 ml
Ingredients
To Pressure cook:
- Mutton– ½ kg
- Shallots – 15 nos
- Tomato – 1 big
- Turmeric powder – ¼ tsp
- Salt as needed
- Water – ½ cup
To Roast and Grind:
- Grated Coconut – ½ cup
- Cumin seeds –1 tsp
- Fennel Seeds – 1 tsp
- Cloves -3
- Cinnamon sticks -1 inch piece
Other Ingredients:
- Chilli powder – 1 tbsp
- Coriander powder – 1 tbsp
- Ginger garlic paste – 1 tbsp
- Garam Masala – ½ tsp
- Turmeric powder – ⅛ tsp
- Pepper powder – ¼ tsp
- Salt as needed
- Water as needed
- Coriander leaves to garnish
- Oil – 3 tsp
- Fennel seeds – ½ tsp
- Dry Red chilli -3
- Curry Leaves a spring
Instructions
- In a pressure cooker add in Mutton pieces, Shallots, Tomato, Turmeric powder, Salt along water and pressure cook for 8 whistles are till the mutton is cooked. Dry Roast the ingredients mentioned under the “To Roast and Grind” section until the coconut turns golden brown and then add little water and grind everything to form a fine paste.
